Maybe sticky this for easy to find?

Obviously most people have the usual things like Stanza, Spotify, shazam, etc.

A few from me.... there are obviously alternatives but :-
Wunderradio http://www.wunderradio.com/
nightstand / night stand  - 2 different apps that do the same thing... a flick clock alarm clock - the former also displays weather details.
iclaimit - to track expenses - you can take pics of your receipts, record mileage, parking, etc.
classics - very much the same stanza (but quicker imo) dozens of free books
teamviewer - http://www.teamviewer.com/en/index.aspx
mobile mouse - http://mobilemouse.com/
speedball 2 - yes the game... now on iphone
numberstore - free 0800 numbers
viber -- free calls to other viber users
mywi - make your iphone a wifi hotspot, - for jailbroken iphones only i think
3g unrestrictor - lets you use them apps that only work with wifi (I use it my hava/slingbox player - as they both say they wont work on 3g - but now they do!!!)
vtie - learn how to tie a tie :oD
Redlaser  - scan an item & off it goes to find if its cheaper elsewhere.
mobimileage - press start, start driving, press stop at destination & you have your mileage - handy for anyone who claims mileage expenses.
camscanner - I use this a lot to photograph petty cash receipts - it converts them to PDF & you can email them as an attachement or upload to dropbox, etc.
WorldLens - not paid for this yet - but its really interesting idea.... http://itunes.apple.com/us/app/word-lens/id383463868?mt=8
epicurious - great food/recipe app
HA Traffic - live traffic reports
RAC Traffice - like above
Tubemap - London underground map / start/destination to tell you where to change, etc.
Wordsfree - free scrabble that can be played over the www & facebook I believe
Instant Heart Rate - put your finger over the camera lens & hold it to the light (if you got LED backlight on an android all the better) & it will work out your pulse.
Supposed to be quite accurate.

This is now a feature on the latest iOS update...

To add to the list (iPhone and all free):

My top pick
Shazam - Hold it up to the speaker and it will tell you the song?
Met Office - Weather
 IMDB - IMDB
Yell labs - Augmented Reality (AR) app for local companies
Layar - AR app that you can add different layers including tweets, resturants etc etc
NavFree - Free SatNav
London Tube - Tube map, route planner and AR guide to stations (Think this is chargable though)
RedLaser - mentioned above but good app!

IT Apps
VNC Lite - VNC
RemoteBoot Lite - WOL client
Apple Remote - Control iTunes from you phone and if you use airport express you can control volumes in different rooms (I like this)
Mobile Mouse - as mentioned above, but this is really good!

Others
Google - Allows voice and image searching
Dragon Dictation - Allows you to voice to text, messages and emails etc..
Conversions - unit converter
iTinker - Spirit level
iTranslate - translates
TV Guide - tv guide
BBC News - news
PS Express - Photoshop express
Last.fm - Streaming radio
thetrainline - train times
vouchercloud - vouchers for stuff
Natwest - manage your bank account
PingChat - Like blackberry PIN, but works on any mobile device
 Mixology - Cocktails etc..

Cool post

Super suduko - good for when you're sat at work waiting for stuff to happen
Ping Lite - great if you do networking, connect to wifi and ping severs, routers etc
Free Mouse - guess this is the same as mobile mouse?
Aroundme - finds whatever close to you, doesn't always work

I know sh*ts bad right now with all that starving bullsh*t and the dust storms and we are running out of french fries and burrito coverings.

Take a look at mobile mouse, it's a lot more than just a mouse it's a multifunction remote for your computer really, a mouse is only a small part of it!

Also just to say cheers to Egg for starting this, I've just downloaded a few new ones ;)

My Android apps of choice:

WYSE Pocketcloud - Tried quite a few RDP programs but this is my fave (and its free).
Evernote - Cross platform note taking & sync. I personally use it for quick notes and to take photos of things on my phone to look up later (eg Books) - you can search for text within images which is very nice.
Dropbox - Cross platform file sync. I use it to keep 4 PC's, Phone and Tablet sync'd up with my important files, picutres, music, books, steam saves and few other bits and bobs.
Google Goggles - When I first downloaded it a couple years ago it was USELESS but I've been playing with it the last few days and its been able to indentify most things I've pointed it at.
Komik Reader - Best comic/manga/picture reader out there (on tablet anyway). Reads loads of formats including multiple folders nested in .zip or .rar files.
Plex - Streaming media collection both locally and remotely. Works very well apart from issues with subtitles but thats being worked on. Only problems I have with it is my internet upload isn't fast enough for good remote streaming and my media server isn't powerful enough to recode 1080/720 on the fly so have to run it on my i5.
Read it Later - 'share' any webpage with Read it later and it will save for offline use later.
Thumb Keyboard - Best keyboard for tablet. Ever.
CPU Master - Overclock your device if you kernal supports it.
Battleheart - Good RPG game, not sure if its tablet only.
XE Currency Convertor - Best currency convertor I've come across.
XBMC Remote - Its a remote for XMBC...  Duh!
Torrent.Fu - Add / view / manage your utorrent from anywhere... Even scan barcodes to add to download list :P

edit:
SplashTop is now my RDP program of choice. There is a HD version that works extremely well on tablet @ 1280x720

Is creating a Wi-Fi hotspot on a phone the same as 'thethering' (which is chargeable)?

My faves (iPhone) are:

Pulse News (Tech and whatever you you want, really)
DropBox
AroundMe (got me out of a jam once or twice!).
Spirit - Game - pure oldschool awesome with a modern look)
Lander - Game (Lunar Lander clone)
Flight Control - Game (addictive!).
NatWest - Banking
PayPal - show me teh monees.
Instagram - f**k yeah!
Camera+ Super awesome camera app with editing, exposure control and accurate focusing.

In response to t(h)ethering yes it is the same, I assume you are talking about iPhone as I think there is no way round it, on all other devices you should be able to change the settings. Also which network are you on?

On T-Mobile.

When I was on Vodafail, I got the impression that if you tether you get whacked with a premium data charge.  Surely, it's just your normal data package?...

The iPhone is pretty much the only device to be intelligent in this respect, when you register your phone it downloads the operator profile from apple, which then locks down some of the features and sets the apns.

In T-mobile and Orange you need to purchase a special data bundle to for this special pan to be provisioned, on Orange I know you get this as standard on some of the high end tariffs, not that it helps you much!

Haven't registered my handset yet.  Not sure if I want to!

You need to register it to use it? It's when you first hook it up to iTunes or whatever you do now iTunes isn't required, it automatically picks up the profile based on the sim in the device

My most used apps (android)

Google Listen - great for podcasts

Amazon Kindle - obvious one but when I don't have my kindle on me it does in a pinch.

Tubemap - map, route planner, departure boards and status of lines.

Tapatalk - This thing makes using forums on a pc seem painful. It's awesome.

Feedly - nice any platform friendly news feed reader, re-paginates articles to fit on whatever sized screen you're viewing on.

Document scanner - use this every month to scan reciepts and invoices, works just as good as a proper scanner, bloody clever stuff.

SwiFTP - activates regardless of data connection, means I can disable data, enable wifi hotspot, connect laptop and ftp files from my device. Got me out of a pinch many times.

I have unlimited mobile data, but not when tethered, so download 127MB file using firefox on the phone, then use the above method to get the file off :)

Flick Golf - costs money but it's a cool little game.

Swype - greatest keyboard known to mankind.

GLWG - a great turn based RTS game but costs money.

Trainline - essential if you're on the trains.

BBC Iplayer - self explanatory, makes a nice difference having it available in an app form rather than just online.

Avast antivirus and anti-theft - pisses all over lookout, prey and other rivals, has the most options for control and it's free, installs a stateful inspection firewall on rooted phones, oh and it works, unlike lookout.
