My Android apps of choice:

WYSE Pocketcloud - Tried quite a few RDP programs but this is my fave (and its free).
Evernote - Cross platform note taking & sync. I personally use it for quick notes and to take photos of things on my phone to look up later (eg Books) - you can search for text within images which is very nice.
Dropbox - Cross platform file sync. I use it to keep 4 PC's, Phone and Tablet sync'd up with my important files, picutres, music, books, steam saves and few other bits and bobs.
Google Goggles - When I first downloaded it a couple years ago it was USELESS but I've been playing with it the last few days and its been able to indentify most things I've pointed it at.
Komik Reader - Best comic/manga/picture reader out there (on tablet anyway). Reads loads of formats including multiple folders nested in .zip or .rar files.
Plex - Streaming media collection both locally and remotely. Works very well apart from issues with subtitles but thats being worked on. Only problems I have with it is my internet upload isn't fast enough for good remote streaming and my media server isn't powerful enough to recode 1080/720 on the fly so have to run it on my i5.
Read it Later - 'share' any webpage with Read it later and it will save for offline use later.
Thumb Keyboard - Best keyboard for tablet. Ever.
CPU Master - Overclock your device if you kernal supports it.
Battleheart - Good RPG game, not sure if its tablet only.
XE Currency Convertor - Best currency convertor I've come across.
XBMC Remote - Its a remote for XMBC...  Duh!
Torrent.Fu - Add / view / manage your utorrent from anywhere... Even scan barcodes to add to download list :P

SplashTop is now my RDP program of choice. There is a HD version that works extremely well on tablet @ 1280x720

Is creating a Wi-Fi hotspot on a phone the same as 'thethering' (which is chargeable)?

Pulse News (Tech and whatever you you want, really)
DropBox
AroundMe (got me out of a jam once or twice!).
Spirit - Game - pure oldschool awesome with a modern look)
Lander - Game (Lunar Lander clone)
Flight Control - Game (addictive!).
NatWest - Banking
PayPal - show me teh monees.
Instagram - f**k yeah!  :rock:
Camera+ Super awesome camera app with editing, exposure control and accurate focusing.

In response to t(h)ethering yes it is the same, I assume you are talking about iPhone as I think there is no way round it, on all other devices you should be able to change the settings. Also which network are you on?

When I was on Vodafail, I got the impression that if you tether you get whacked with a premium data charge.  Surely, it's just your normal data package?...
