Not something Id ever really considered, always put me in mind of rice pudding which is one of the few things Ive always despised.

However, randomly tried a risotto at a restaurant a little while ago as I didnt really fancy anything else on the menu. Frankly it was awesome. So ever since then, Ive been considering making one, and tonight I finally got round to it.

- Fry onion and garlic in butter
- Lob rice in
- Good splosh of White wine
- Add chicken stock gradually

meanwhile... fry off some chicken, mushrooms, pepper...

once the rice is cooked and the stock is absorbed, lob it all together, add copious lime juice, season and serve with salad.

Overall, I was very impressed.

I do get the impression though that its something that will need perfecting... so I wondered if anyone had any awesome risotto recipes?

Risotto seems to have a reputation as something that requires a bit of finesse (or even something that is hard to do) but Ive always cooked them and its always been incredibly easy. The thing I like about risotto is it can be pretty much a "throw in whatever you have in the cupboards" type dish so its never the same twice.

I always cook it in the same pan, usually onion and garlic in lots of clarified butter, then some mushrooms and chicken (or whatever else is floating around) then toast the rice and coat it with the butter, and finally add your stock all at once (obviously only if you know the correct measurements).

Steak and mushroom risotto is lovely. Sundried tomatoes work well if you can crack a good tomato flavoured stock as well.

I might try that...hopefully itll go as well as last weeks cannelloni! :thumbup:
