Title: Instrumental recording

I need some kit to record various instruments being played - some via microphone, others via pick-up with the normal connector (no idea what its called, think the thing that you plug into an electric guitar).

Any recommendations?

I believe the M-Audio kit is supposed to be quite good for this, just plugs in via firewire or USB I think.

Essentially its a sound card... but with pre amps and stuff..

Hes right, grab yourself one of the M-Audio Fastrack USB sound catrds, it will do exactly what you want I think.

Depending on your budget always go Pro Tools if you can. I use an Mbox 2 and its got by far the best pre amp on this level of kit Ive ever heard. Its not cheap though...
