Due South was great too, I used to enjoy that as well.

For me, 24, Prison Break, House and Greys Anatomy.  I liked nip-tuck as well but the last season (4) was not that great.

Humour - Coupling UK  - Seinfeld US

Sci-Fi - Space above & Beyond & New BSG (Stargate Sg1 & SGA good too especially for additional humour)

Smallville is a favourite, glad they are including the justice league in episodes.

24 is excellent action series.

Historical -  Rome (although I claudius was brilliant in its time)

I do not class sharpe as a series, but tv movies that were just the dogs, its a greater status then a tv series

They sort of lead on a bit more than the average movie, but yeah you cant really class them as a series in the conventional sense. Especially the recent two parter special.
