Mocha latte cheesecake

Now then my pretties, Caffe Uno do a stucking funning Mocha latte cheesecake which I want to replicate.

The gist off their menu is "Creamy vanilla and coffee cheesecake topped with chocolate chips and served on a rich chocolate sauce".

Sounds easy enough, but Im having trouble finding a really good cheesecake recipe for this, or even just a starting block recipe I can add the coffee to.

I think this is the best standard sounding one Ive found so far, but isnt baked.

For the base:
    * Butter for greasing
    * 175g digestive biscuits
    * 75g unsalted butter

For the filling:
    * 400g cream cheese
    * 2 vanilla pods
    * 100g icing sugar
    * 300ml double cream


Any thoughts, recipes or suggestions?

How did this go?
I know sh*ts bad right now with all that starving bullsh*t and the dust storms and we are running out of french fries and burrito coverings.

Havnt had a chance to try this yet! Its on the cards for December and a full report will follow.
