Got two frozen cooked lobsters from Tesco last night. Any ideas/suggestions on cooking and serving them?

Are you a fan of Thai as I could give you a recipe for Thai Lobster :) Tis rather nice :)

Ingredients

    * 1 Lobster, freshly cooked
    * 300ml coconut milk
    * 2 stalks Lemon grass
    * 3 red chillies, de-seeded and diced
    * 100g butter

For the rice

    * 175g Basmati rice (Can use any rice really, I just prefer the Basmati)
    * 1 pinch saffron strands
    * 4 cm fresh ginger root, finely grated (Not essential but adds the punch to the taste)
    * 1 bunch Coriander, finely chopped

For the lime butter

    * 100g butter
    * 1 lime, zest and juice

Remove the claws from the lobster, bash with a lobster hammer or rolling pin and remove the claw meat. Put this to one side.

Slice the tail in half along its length.

Place the coconut milk in a pan. Bruise the lemon grass stalks with a rolling pin to release their flavour and add to the coconut milk along with the chillies.

Heat the coconut milk mixture gently and whisk in the butter.

Bring to the boil, turn down the heat and add the lobster tails. Heat through and then remove and keep warm.

Place the rice in a saucepan and add the infused coconut milk and enough water to cover.

Dissolve the saffron in a little water, and add to the rice. Add the grated ginger.

Bring the rice to the boil and continue to cook until all the liquid has been absorbed.

To make the lime butter, beat the butter, lime zest and juice together in a bowl. Place the butter onto a piece of foil and roll up like a log. Then put it in the fridge to set.

Fluff up the rice and stir in the flakes of lobster meat and the coriander.

That should do for two people if you are cooking for more just up the ingredients :)

Love thai and weve eaten a lot of thai lately (try red thai tuna steaks yum!) - definitely give this a go sometime but might need to try something different tonight just to avoid overkill!! cheers for the recipe - looks great

Big fan of lobster, what did you have in mind? Any ideas as to what you are wanting to try?

You dont really need to cook lobster with anything else to enjoy the taste, you could even simply defrost it and eat it as is. By the way youll find they are a real arse to break into without some tools lol :lol:

Im not a fan of pairing it in overpowering recipes such as curries, as youll not be able to enjoy the taste the same, you might as well be cooking with crab or prawns once its curried for all the difference youd notice.

Take a look here, it might have some good ideas. Id give the Lobster Tail a go myself:

cheers for the link Nige Ill have a good look through that.

Im not after anything thats going to kill the taste of the lobster just a nice way of cooking it really. Might just cook it in some butter actually.

Just to add Im sure Grey M@as recipe is delicious and probably worth a go at some point once you are happy with how to cook and treat lobster, it just wouldnt be my preference is all :)

Yeah mixing lobster with most things spoils the taste but I wanted something different one day and tried that out :)

my mums says frozen lobster is nothing like fresh, so she refuses to buy it

when we were in canada for a bit you used to be able to get 2 hour old fresh lobster straight from the atlantic

We just boiled it and rubbed in some seasoning. Ffion loved it - apparently I just dont like lobster lol!

lol no just a touch of salt and pepper in the water. It was the flavour of the lobster I didnt like but hey you gotta try everything once!
