Chocolate truffles...suggestions?

I thoroughly recommend this simple recipe:

I mean, 2 ingredients and thats about it (unless you add cocoa powder dusting etc), and they really are quite nice.

Im wanting to make some more but want to make them a bit fancier...maybe mix different things in. All I can think of is chilli chocolate truffles...but any suggestions on what else I could use? Strawberry essence etc?

In future try just gently melting the chocolate in the cream. Scalding it always carries the risk of burning it and theres no benefit in modern times since everything is pasteurised.

Edit : For future ideas, try getting some extracts and syrups and flavouring the ganache. Cherry is very nice, or you could try using some orange bitters. I like adding a dash of dark rum (not the nasty spiced stuff), and rolling them in crushed nuts.

Try rolling them in popping candy or flavoured sherbets as well.

For me it is all about praline or hazelnut when it comes to chocolate.. mmmm

Hah.

Thanks for the suggestions Chris. When I went out to get the cream I got some orange extra, wanted to try strawberry extract but they only had lemon and orange. Not sure how much was required, it smells orangy but doesnt taste that strong, am guessing it might taste differently later when it cools :S

Also got some strawberry jam...Im going to *try* and make a jam filled truffle. Things are going to get messy I think.

I thought about popping candy...this batch is going to be a mix of plain cocoa powder covered ones, white and milk chocolate covered ones, orange flavoured, and *hopefully* the jam filled ones.

I started out using the melon baller, but soon got fed up...ended up with golf ball size truffles...thats a proper size.

This is one thing I and Chris agree on totally. Another option is rolling them in hundreds and thousands. One lot of truffles Ive eaten were cherry brandy flavour.

Hundreds and thousands are always full of win and should be used liberally with child-like abandon.

Well theyve been made now. The jam filled ones were a bit easier than I thought as the ganache was soft enough to fold over the fillings and smooth out the seams. I had to chocolate coat all the orange ones as it seems the extract softened the ganache considerably.

Will just have to wait for the verdict from those who eat them now.
