Im not heavily into PC Gaming but I like to play the occasional FPS with friends. I need something that is powerful enough to run two monitors at 1280x1024 mainly.

A faster dual core may be better than that quad, depending on your needs. Have a google.

Its an Xpertvision, still have 2 year warranty and are just basic generic cards. good value for what they are.

Yep, downgrade to a faster double core and spend any extra you save on the graphics card.

Settled on keeping the quad core but going with an ASUS mobo with an ASUS 6800GT gfx card.

NOOOOO, the 6800 was a great card in its day, but its somewhat long in the tooth now. Dont buy it, unless its only costing you about £40!
