First would there be any issues in running 512mb dimms with 1gb dimms as it would allow me to have 3gb of RAM, it would be all the same make/type just x2 512mb dimms and x2 1gb dimms.
Second for gaming what would I be better off with, 2gb in Dual channel or a total of 3gb but in single channel.

for gaming Id say speed trumps size, so 2GB Dual channel is probably better than 3GB single channel.
its going to depend on the game to an extent though.

oh and to your other question, IIRC I am currently running 2x 256, 1x512 and 1x 1024 with no problems. I dont have dual channel though, the 760MPX doesnt do flashy modern things like that.
You shouldnt have any problems with different sized dimms, but for pure speed duel channel>capacity as said above.

funny cause my nforce board runs dual channel with 2x512mb on one channel and a 1GB stick on the other.
i would have thought the memory spread equally across the two channels would have still put it in dual channel mode.
If you have something that thrashes the memory then the extra ram would be worthwhile, unfortunately there isnt much that will need more than 2GB ;)

To sum up, get 2x1gb sticks if you wanna do normal stuff, otherwise 2x2gb sticks if you wanna power-game / encode etc etc.
