We have a coal stove at home and when it gets hot enough it produces the same effect. Its the gasses burning as their is enough heat. Normally they wont ignite as the flames alone to provide enough heat.

Still really cool tho... at BK we used to put pickle chips (that come soaked in vinegar an salt solution) into the microwaves to create Lightning
