you already can in single player, one of the possible loot items when you find an enemy cave with treasure chests in it is a saddle. You can put this saddle on a pig and ride it. Alas you cannot control where the pig goes so its quite a lot like the gif really.

looks like a minecraft.net server is down again :-(
